Is there any bag that could accommodate the following:

D7000
Nikon 17-55 2.8
Nikon 70-200 2.8 VR1
SB-800
Asus Transformer Prime

I'm thinking the Thinktank UD line, but I'm not a huge fan of zippers.

Think Tank Retro 20 will fit all that and more and has a large pocket on the front for my iPad.

I did beef up the bottom padding of the main pocket with a thin layer of foam sign board under the inner foam which weighed almost nothing but offers a more rigid base for impact resistance.
