To keep your customers as happy as possible, so they buy other products/services from you? To increase referrals? To gain credibility? To make larger prints? To earn a reputation as a very-high-quality supplier? Just because? Lots of reasons why one can choose to increase quality even when the market is not demanding it.

OK, first: it does not add to the amount of time it takes for you to get the image processed. We've been through this. If shooting RAW is taking up a bunch more of your time, then you're not using the right tools or you're not using them well.
And second... price and volume are not the only two variables in a successful business. Customer loyalty, perceived value, frequency of repeat purchases, cross-correlation with purchase of other products and services, and oh-so-many other variables also enter the equation. People who think only about what directly impacts current volume and current price may be able to make a living, but should not expect to become wealthy.
