He doesn\'t only convert to Lab, but selects the Lightness channel, so that the color saturation is completely untouched by sharpening. When doing sharpening on all channel, saturation is affected.

An alternative method is to sharpen a separate (duplicate) layer and set blend mode to luminosity.
