Andy,
If you know all this already, sorry - this is "just in case". This sounds like what happens when the indexing tab is left in the ai, ais, and af position (down). Non-ai lenses control the aperture ring different from the others. Your adapter may have the same tab on the mount as the FM, F4 etc. You flip it up to mount a non-ai lenses. Some have a little release lock to allow it to swing out of the way. It can damage the camera mount if a non-ai lens is mounted without preparing the body first.. The tab should be on your adapter at approximately 2 o'clock See photo - tab in up position ready for ai lens
