You might have a faulty camera. I’ve used multiple Sony models (A7, A9, A1, AR IV) and never experienced the issues you mentioned in your post.
As for the camera menu system being complicated, I think that’s more of a Japanese design trait. My Nikon D800 was the same, and my Fuji X100VI is also like this. UI/UX has never been a strong suit of these companies.
