this is totally case by case, I believe this one I just hold the AEL(reprogram as AF hold)and click the shutter. So it is AF, but many case, as you described,you do AF once and recompose or just follow, I use this way quite often as well so that I can do recompose focus compensation based on experience at close distance, quick get the shot without focus delay once the subject still in the zone.
