I thought about the eyes as windows thing a day or two ago (before I saw your post), and spent a frustrating couple of hours trying to get something close to the very first pic I took with my new camera (below). I can see your dog's eyes working well for this. I bet it was difficult to get the shot cause I had a lot of trouble with a willing human subject. I shot with a 180mm macro lens and the DOF was about paper thin. I had to just set a manual focus and then lean forward and back while shooting off some bursts to get the outside view in-focus. I worked on this over a couple day period of time.
