The APO 2x does not affect the infinity setting of the lenses that do not have the the little extra throw past infinity. For example the 180mm f3.4 APO when set to infinity is all the way to an infinity stop and will still be in focus at infinity when mated with the APO 2x.
With the digital age, some of the lenses may need a slight adjustment to focus to infinity on a digital sensor. It just may be the way Leica set them up for film.
Here was an infinity test with the APO 2x and a 400mm APO, though the 400mm is one of the lenses that will focus past infinity. I have shot the moon with the 180mm f3.4 APO with 2x APO extender and also had good focus.

Thank you. I probably will give a small margin of infinity for Nikon-version. To insure that the infinity will always be.
Gif showing focus shift and the LoCA/spherochromatism with the R 80. The lens was focused at the '00' and not altered as it was stopped down. The gif shows the focus moving backwards (away from the camera) as the lens is stopped down and it also shows the longitudinal CA (or possibly spherochromatism). The images in the gif where individually colour corrected at the effective point of focus, not at '00', which would replicate real world application. In fact there is a difference in the colour correction needed from wide open to stopped down.

beautiful! i found the bokeh from some of your previous shots at longer distances rather distracting, but i really like the focus transition here and there's none of those distractions.
