TNEF's Enough (free) - Extracts files from those annoying Outlook data files when the sender uses rich text and attaches a file.

Vienna (free) - RSS feed reader.
VLC (free) - Media player.
I do not mess with stuff too much but the ones I use are:
CG Invoicer for creating and tracking invoices.
Stuffit for zipping and unzipping files
Adobe CS3
Aperture
Bento for data bases
DX0 for automating processing from RAW
Quicken for keeping track of the money.
There are some others I use on my other machine for working with audio and video.
I forgot an important one. Image Ingestor for importing images from the card, renaming and also creating a backup on the network. Standard version is free and the new version supports up to 8 cards at the same time.
DX0 does have a trial version. It is cool as it can take all your images, correct cromatics etc, leave the colour as camera, recover highlights, sharpen and export to jpg in a specified folder.
Set it up, click the start and go have a cup of tea while the computer is doing all the work. If you have got it nearly right for most of the images I have found that there are really few images I have to go back with photoshop.

A lot of excellent suggestions here... I've been using most of them for a long time. Here's a few lesser known apps that have also made my life easier and happier...
Disk Inventory X - free - graphical representation of all the files on your drive. Great for finding that misplaced 800mb movie file, backup folders, etc
MacJanitor - free - Unix architecture was originally designed to never (or very rarely) be shut down. Many system scripts don't get run when you turn off your computer - this runs them.
iWow - commercial - best adudio equalizer i've ever found for iTunes. INCREDIBLE sound. Make sure you have a fast system with lots of ram though.... it's a serious resource hog
iPod Rip - shareware - gets music off an iPod
Monolingual - free - deletes the extra 2-4 gigs of language packs included with OSX. Be careful though... you can trash your system and have to reinstall from scratch if you delete the wrong items
Although I was using FileZilla I removed that and now use Transmit, works very well. For some reason FileZilla wouldn't ftp everything from my website correctly, a few (random) directories were always missed, very odd.
I will also add CocoViewX as an EXIF stripper, it is freeware as well.
1Password seems to be an excellent program too.
Got an email from Adobe on Friday evening, my cross platform license request has been completed and the software (Lightroom, Photoshop CS3 and Dreamweaver CS3) has shipped, can't wait to see the big brown van outside my house in a day or two as I will finally be able to use my MP for the reason I bought it for!

Agree with Transmit. Best FTP i've used on my 24 years on the Mac.
Also recommend Yojimbo - it's a program for keeping serial numbers/passwords/notes of any description. It's clean, easy to use and best of all it syncs via MobileMe (if you have that) so is up to date on all your computers all the time.
VisualHub. Best video conversion tool out there.
Perian. Multipack of codecs that I recommend to everyone. Also, Flip4Mac (WMV for Mac)

GraphicCoverter is a useful lightweight graphics editor. Though Pixelmator is newer and jazzier.
Rapidweaver is a kick ass web dev tool, I use it professionally a great deal, and while some might call that awful, it helps me produced websites my clients love!
X-Plane. If you want some fun down time and like to slip the surly bonds of earth, I recommend this. Next to Photography and Macs, this is my other particular geekery.
Coda has been mentioned already I see, but it's great, use it every day and it makes life that much simpler!

TextMate is a fantastic modern text editor. I wish I would have it on my Linux systems, too. (Check out their screenscasts!)
OmniGraffle is a fantastic diagramming tool which makes drawing really easy and comfortable. Unfortunately, it's a little bit expensive (I don't draw diagrams that often).
Delicious Library 2 for you book, cd, movie, etc inventory. Scans the bar code with your webcam!
