Can Natural Bridges be done in a day? I am considering whether or not to cut south to Monument Valley and go back to Vegas via Page or spend more time in Moab and just take the freeway home.

Natural Bridges is small in terms of land mass. It's one loop drive that has some hikes and short walks to overlooks. Can definitely be done in a day or less.
That said, if you want a more scenic route on the way back to Vegas, I would recommend going via Capitol Reef and Bryce Canyon. Bryce has lots of easily accessible overlooks for you, and Highway 12 between the west side of Capitol Reef to Escalante is one of the most beautiful stretches of road in the country. Lots of places to stop for pics along there.
I'd put that head and shoulders above Monument Valley, but then I didn't grow up on John Ford westerns and honestly didn't like Monument Valley that much.

That's a great suggestion - I went to Bryce 15 years ago and did a lot of hiking and don't feel the need to go back (yet). Capitol Reef is something I would have probably overlooked had you not brought it up...

Depending on time of year and weather, you've got two additional scenic drives in Capitol Reef - Cathedral Valley in the north and Notom-Bullfrog/Burr Trail Rd in the south. Dirt roads, so definitely don't do them if they're wet.
