We’ve long been Epson printer users here. I have the Epson P-9000 and my wife has been using the P-900. After having issues with her perimeter she bought a Canon Pro-1100.
I can usually help her with set up stuff… on Epson. But I’m currently stumped by some issues with the Canon. I suspect that I could eventually figure these things out, but I’m hoping that someone can point me more directly to answers.
I’ll start with one particular issue.
She prints to some small paper sizes used for card sales. The paper size is not among those that are on the printer by default.
What is the process for entering a custom paper size on the Pro-1100 printer. She’ll be printing out of Lightroom. (That’s the other challenge for me — I print from Photoshop…)

I would recommend watching YT videos by Julieanne Kost and Keith Cooper. Kost has videos on Lightroom (using an Epson, but the LRC settings for paper and print size are valid) while Cooper has video(s?) on the printer.

I think we may be making progress with some assists from a paper vendor that she uses. I’ve issue seems to be some kind of conflict with Apple’s AirPrint driver. The second one that seems odd to me —. and a little unbelievable after using Epson printers — is that, if I’m understanding this correctly, in order to use non-Canon paper stock and/or custom paper sizes you have to download and install some auxiliary Canon app. Still working on that.
On my Epson printers (currently P9000) I can simply set up custom paper sizes from the print dialogs. That does not seem worthy with the Canon Pro-1100.

I’m just now hearing that it creates problems. As a long (VERY long) time Mac user who prints on big Epson printers, I was surprised.
We’re still wrestling with the issue. Currently she can enter the desired paper size on a dialog that should add it to the list of available sizes, but after she does so it doesn’t appear in the list.

A couple of comments but know that I don't have the Canon Pro-1100, I do have the Canon Pro-1000. As mentioned by another user, I don't think you should be using the AirPrint driver. You want to use Canon's CUPS driver and make sure you have the latest version correctly installed.
You don't need to install the auxiliary app to use 3rd party papers although that is an option and allows you to do some customization/fine tuning for specific 3rd party papers. The 3rd party paper manufacturer should provide you with the settings to use on your Canon printer, i.e. media type and the profile which they would typically provide. Of course you can also generate a customer profile for a 3rd party paper as well.
I will say after using my Canon printer for a number of years that there are quirks/issues using the printer on MacOS (driver compatibility issues with OS updates, Canon application issues, etc.). I have no experience with Epson so can't compare.

I might be able to help a little.
Guessing your pro-1100 is going to work pretty much like my pro-1000. First, you can use ICC profiles just like you would use them on any other printer. You would select the profile, and the corresponding paper type the paper provider suggests you use, in LR, PS, or Canon Professional Print and Layout (PPL). In all case that I have found, what you set in software will override what has been set on the printer. Life may be good.
Canon also has a second type of profile, AM1X, that is essentially an ICC profile + a whatever specific printer settings should be used with that ICC profile. These are loaded directly into the printer with Canon's Media Configuration Tool (MCT). Too be honest, I haven't gone very far down that path.
Also, I never could get a decent print when printing directly from LR, on a Mac. In desperation, I installed Canon's PPL software, which can be used alone, or linked through LR. The same exact files now print perfectly through PPL. My issues may be related to the Airprint issue, but once I found a method for getting great results, I decided it wasn't worth trying to troubleshoot printing directly from LR. As always, your mileage may vary.
