If you pan with the plane against a clear sky, rolling shutter will be virtually invisible since there are no reference points moving through the frame. The issue only pops up if there's a background behind the plane—in that case, the background will appear warped.
Another issue could happen if you shoot prop planes or copters.
The rear blade shows some distortion in this pic.
I don't do air shows, this was just a random pic while I was out and about.

If there IS a background, then the longer the focal length of your lens the worse the rolling shutter will be. Assuming you pan the camera at the same speed (degrees / second)
