Congrats on the new camera! I use my GFX100II, which should have the same AF performance, for the kind of work you describe and I love it. It was a huge step up from even the 100s and definitely from the 50s.
I can't share some of the client work here I've done with it recently but I followed a crew of utility workers around the desert with it and it kept up with no problems at all, even when the sun started going down. I was also shooting on Nikons too and the GFX may have been a tad slower than the Z8, but if anything it's more accurate, when it's focused, it's almost always tack sharp. And the files are simply beautiful.
I shoot almost always with the 45 and 63 which aren't even LM lenses. Of course the 110 is faster (and stunning) but I don't use that FL as much. The 100II with the 45mm is one of my favorite combinations ever.
