I picked up an extended eyecup for the camera and have run into a problem removing the 2 small phillips head screws to start the install. The new eyecup came with a small screwdriver but I can not get the screws to budge. Before I strip the heads, anyone run into this who can offer some advice?

I remove my eyecups all the time and have done it to about 5 different R5II's now with zero issues. Which one did you buy? Maybe the screw driver it came with is no good so you might try using a different mini Phillips on it. I use these:
If you don't already have a set, grab a mini set with the wheel on the butt of it so you can press down with palm while turning and removing for the first time:
I would assume they are JIS screws (JIS B 1012), not Phillips. They are all cross-head screws but slightly different. I have a set of Vessel drivers from years ago. https://vesseltoolsusa.com/jisdrive
We leave Florida in a couple of weeks. Will just wait to get home. I have a complete workshop there where I can do serious damage.
update
just gave it another shot - success
The replacement also included 2 sets of replacement screws so it looks untouched now. The larger cup will be a big help to me.
JIS - Japanese Industrial Standard - drivers are mandatory when working on cameras. Phillips screwdrivers will bugger up the heads most of the time. You can feel how well the JIS drivers lock in to the heads.
