I have not tried the Voigtlander, but I do own the Samyang 75mm f/1.8 AF lens for Fuji X. I'm sure it's not as sharp as the Viltrox f/1.2 lens, but it works well for me as part of a small prime travel kit. I prefer the longer focal length for portraits anyway. I use it on an X-T5.
I have the Ultron 75mm f/1.9 and use it on my X-T5 when I want something longer than an 85mm equivalent. Seems pretty sharp to me, I don't see any downsides as long as you enjoy manual focusing. I uploaded some samples here: https://flic.kr/s/aHBqjCGtnB
I probably use this lens more on my Zf than on the X-T5, but it works great on both.

I haven't used the CV 75 f/1.9 Ultron, but I have used the CV 75 f/1.5 Nokton and it is a spectacular lens on Fuji X mount and still fairly small. I think you have several good choices here. Another lens to consider might be the Thypoch Simera 75 f/1.4.
I use the Samyang with Fuji as it has 70mm mfd and native af... I got the Viltrox too, but it is too big.. However, I use Sigma 56mm 1.4 indoors more than the 75mm options... It is smaller fit with X-E5/X-T50...
It all depends on what / where you shoot and mf vs af choice... mfd is less issue with apsc crop factor...
The Samyang look really sharp, but I like the MF of the Voigts. To complicate things more, looks like Voigt may be announcing a 70 or 75/1.2 for Fuji the end of February.
I think no one knows what Cosina might announce at CP+ end of February. Personally I think more Fuji X lenses are unlikely, but probably still worth waiting.
I own the 75mm f1.9 but only ever used it on Leica and Nikon, not on my Fuji. It’s a good lens but it’s not bitingly sharp at f1.9.
The manual focus experience on this lens is actually a bit annoying because - at least on my copy - true infinity focus is just before the hard stop. And because it has a rather short focus throw, it is quite difficult to accurately hit that. Even if you’re taking your time and zoom in in the EVF it’s finicky.
It's probably your adapter, not the lens. Most adapters are a tiny bit too short unless you shell out for a more expensive one. You can fix it with shims.

Nope, not an adapter issue. It's exactly the same on the Leica M-P, no adapter involved.
On the Fuji, I use Fuji's own Leica M adapter, which I think is pretty accurate as well.
The problem is not that it focuses past infinity. The problem is that it does so by a relatively small amount and there is very little focus throw around infinity - with the 75mm f1.9 moving the focus ring by maybe a millimeter makes a big difference between sharp or soft image..
I have other lenses that focus past infinity, which is no big deal as long as it's easy to focus them on the correct distance.
I have the 75/1.5, I like this lens a lot.
It gets very sharp when stop down to f2.8.
If you wide open this lens you will find something interesting: for portrait distance it is not clinical sharp but already good enough (ladies like that). While for short distance it produces some "glow" there, some may think it is lovely.
BTW, the bokeh of this lens is superb.
