Just got back from the Bahamas and took a few shots of the pool area from a deck up using the setting that lets you see the target better when outside is bright and I noticed that the people in the pool appear "darker" than they really are.
Could that be caused by using the setting that brightens the LCD while taking photos in a very sunny environment?

According to this article, what you described seems normal.
"This function has been realized as a result of efforts by the picture quality engineers in making various image corrections. But the image you see on the LCD does not necessarily match the picture actually recorded. So, keep in mind that when you see the image on the LCD with the Outdoor View Setting, use the image only for checking the condition and composition of the subject."
