I am affraid you will not find a lot on videography with these cameras. Having said that, understanding basic videography concept helped me a lot especially with frame rates and shutter angles. One main advantage with video is slow shutter speed (meaning more time to spend in the wild!).
One thing I would recommend for sure is a good microphone and external audio recorder.
Just start simple and practice and it is not hard!

YouTube best bet is to do your own search on YouTube and include keywords like Z8 Video and you will get a lot of content. Setting up the camera for video is pretty easy. Processing the video clips is more complicated. You should investigate what software to use (DaVinci Resolve, FinalCut Pro, Adobe Premier Pro, etc) and again YouTube search is your friend. I too started to get into video primarily for wildlife, BIF and slow motion and there is definitely a learning curve going from stills to video, but the software and post processing is more of a challenge to me. It’s too bad that Miranda does not have a section on the form for this.
