As far as the North Shore goes, yes, I think that’s too much in one day. Tettegouche is a going to be a haul from MPS, and it’s a pretty big park. You could fill most of a day just in Tettegouche.
You could go up to Split Rock as planned. Be sure to walk down to the shore to get the iconic calendar shot. Iona’s Beach is a hidden gem. It’s all pink rocks, and I have never seen anything else like it. Gooseberry Falls is closer to Duluth and has some really nice sets of falls that are easily accessible from the visitor center area. The highway bridge makes a nice arch over the Upper Falls area. In Duluth, Enger Tower provides a panoramic view.
Even with just doing these, I would get a very early start if coming from MSP.
Started day 1 in St Paul, visited Minnehaha falls, cathedral of Saint Paul looks like a great evening photo opp as well. I didn’t take my camera but wish I did for the aquarium in the mall of America. Starting day 2 and heading up to Duluth today and will also hit split rock lighthouse likely on day 3. Will post an update again tomorrow on what we saw today.

Ended up spending most of the time on the North Shore getting some great shots. I have just started sorting and editing a few shots and my favorite spots in Minneapolis / St Paul were the Cathedral of Saint Paul, Minneapolis Zoo, and Minnehaha falls park. I wish I would have spent some more time trying to get a sandhill crane shot but only really seen a few in fields along the highway.
