As evidenced by other responses, there is more than one minimal kit.
Really Restricted - Sony RX100 III or VI
Somewhat restricted - E-M5ii and 14-140ii, perhaps throw in the 8-18.
Z restricted - Z FX body with 24-200. Sometimes augmented with 40 f2.0.
Z landscape kit: 14-30, 24-120, Tammy 70-300Z. Depending on where I go, it may be a combination of just two of these lenses. Augmented with 20mm f1.8Z if I think night sky is in the works.
I'm a "one or two lenses" type of guy, so when traveling I often just take my Leica Q. When I like to have a bit more flexibility, I take my Zfc with the Z DX 24 f1,7 and the Z 40 f2.
Both cameras are light, small and produce great pictures.
I am a bit of a minimalist. If it is a pure family vacation, my iPhone is all I take. Otherwise, Z6 + 24-70 is the basic kit. Of course, if part of the vacation has specific photography opportunities, the gear I take changes
For landscapes, I used to use a combo of the VC 15mm 4.5 and the 20mm 1.8G for wides, but I recently picked up the Viltrox 16mm 1.8 to potentially replace both and so far I really like it. I'll be replacing the 70-300 with the Tamron 50-400 eventually. Landscape kit:

For traveling with the family and kids I use this kit:

My two-lens kit, it changes depending on what the occasion is:

Substitutes for either: 35mm 1.8 S or 85mm 1.8 S or 16mm 1.8 Viltrox (rarely)
often I also take the Z 24-70/4.0 for a one lens kit
I already have the Voigtländer 15/4.5 Z
and hope to get the Voigtländer 40/1.2 Z when it is available again
I would add mybe the smaller Zeiss ZF 25/2.8 in between, which also can close focus
and still take the Zeiss ZF 100/2 MP or the Zeiss ZF 85/1.4 on the long end.
sometimes I leave the 85 or 100 and take an old 70-300 lens or 80-400 on the D750 when I expect to meet some birds.
During my last vacation to Seattle / Olympic National Park I had:
Z8, z28/2.8, cv50/2, z24-120/4, z70-200+1.4ext, and gfx100s2, gf50/3.5, gf20-35/4. I did not have everything with me at once, but only what fit into my camera bag, so two cameras with 2-3 lenses total + flash.
I used Nikon to shoot 80% of (~5000) images, and used z24-120 for the absolute majority of them. I could have shot everything with 24-120 and miss nothing.
