Why not film for bw? The m11 will achieve most shots you need and create bw in post. Why not shoot bw film, no digital will ever be able to reproduce the experience and feeling of true bw film imo. You can have fun with different film stocks, develop and print on your own. Also bw film stays good for what feels like forever, so you can buy expired film stocks for fun too. Obviously, if you’re a professional and the monochrome serves a specific niche purpose, otherwise, seems like film could be more fun and challenging if you’re trying to do more bw.

Try using bw film for nighttime or dark indoor street/candid photography. Set aperture to f8, shutter to 1/125 or 1/250, and let me know how that goes? ISO 25000+ on a color M11 is borderline unusable. On a M11M, it's film like. On film? it's black with no white.

I love my Rolleiflex F 2.8 - magnificent images, but really, once you go above 800 ISO fine detail declines rapidly. Above 1600? Forget it. Monochrom Leicas are un a different league at high ISOs.
