I would stay away from the smaller filter sizes... you might dark corners. Using larger diameter (>67mm) will enable the possibility of using the filter on other lenses with larger diameter.
If you just want an UV-filter mainly for protecting the fron glass I would go for the 67 mm filter without the adapter.
What you listed are adapters, not filters. You need adapter if you want to use the same filter on two different lenses with different filter sizes. For your 28-75 you will need 67 mm filter. I personally use Hoya HMC filters on my lenses, including 28-75. So, for example, if you want to buy polarizer, it would be listed as "Hoya Cir Polarizer HMC 67 mm". They have those filters on the website you refered to, I checked. By the way, many people here will recommend you to buy either B+W MRC or Hoya Super HMC filters. If your finances allow you, those filters are better, but I think Hoya HMC will work just fine too.
If you can find it, Hoya also has a Hoya UV HMC Super that has the same glass as the Pro 1 HMC Super but at about 60% of the cost. The difference is that the Pro 1 ring is extra-thin, which can help avoid vignetting. Vignetting will not be a concern if the lens is used on a non-full-frame camera, like a 300D, 10D, 20D or 1D.
