I wouldn't call it cheating and I would have no problem as long as you are upfront with it and make the necessary disclosures, as you have done. It's a different matter if you had not said anything about the sky replacement.
Photography is a form of art, and with art, anything goes. You are painting your image on a canvas with different photography strokes. Highly acclaimed and very successful commercial photographer Joel Grimes is Master of the Composite Image:

Does a disclosure really matter? I marvel at the number of highly, highly processed images on this forum including many with sky replacements or other major alterations. Many of them are well received and often win the featured thread of the week. I am amused to see these works of digital art and then read a comment like "great capture".
