Begin watching from the 18.53 mark, you will see how to set up your Zebras.
To control your zebras you use your control wheel to adjust your ISO. You need to go into the setup section and assign control wheel for ISO Watch from the 39.1 mark. He will demonstrate using the control wheel to control ISO for the Zebras..... Essay Peasy to control your Zebras, if you wish to use Zebras

This thread isn't about how to use Zebras. It's about how to make them accurate. With the default settings, the Zebras will appear when you're not actually clipping (the Zebras are a lie).

"It is important to be aware that camera zebras are based only on the green channel, which still is useful enough in most cases"
For me 99.8% is good enough for me, without utilizing any custom buttons, and very easy to just use the control wheel My custom buttons are utilized for other tasks that's important to me. .
We all shoot different. Your up in Alaska with lots of white snow so I can understand you would prefer 100% accuracy, and to be honest if I visited Alaska with lots of snow, I would not worry about blowing out the highlights with my set up. We have many white birds in the sunshine state, and I never worry about blowing highlights...
I think after using & experiencing zebras one gets accustomed to how you have things set up, and make adjustments as need.
