I'm a long term D750 shooter and after renting the D500 for a week (when it first came out) I too found the files, in general, lacking in comparison. I was also extremely bothered by the specular highlights being difficult to manage. I shoot a lot during less than optimal light and need skin tones to survive.
But, of course, like anyone who's ever handled one of these little DX monsters I ADORED the snappy mechanics of 10fps and an endless buffer. What to do, what to do

Well, I returned it and then was equally unimpressed with a D5 rental so I sat on my hands until Photokina. Really, really, really hoping for my D810 upgrade but then Nikon took a big crap with their 360 gopro so I kept shooting away with my D750.
Until one day while shooting indoors at a trampoline park with silly ISOs and my slow camera, and it just sent me over the edge!! Sure the 80-200 didn't help matters, but I just knew my whole set up was dated for this type of shooting. Since
I always keep my RAW files (because tastes change and skills in post grow) I started to play around with some files from months prior.
Maybe not quite as flexible in post as my D750 (or compared to the D5 RAWs) but still easy to slide up shadows and exposure, and seemed to respond well to BW and other film emulation conversions. One in particular gave me the silly grin. The sharpness from this sensor is amazing; like D810 amazing. And shallow DOF is possible.

This got me thinking... I reasoned that at the end of the day, DX is fabulous and even advantageous with long glass. Since my kid is 3 and will be doing sports in a couple of years, even if I find some challenges from everyday shooting (compared to FF) the D500 will do very well. I looked at this image thread (and on flickr) and there are stellar results in colors and sharpness of BIF and sports that is equal, or better, than anything the D5 can put out. And old dog mechanics of my D750 are forgetaboutit. So I got one.
And I got some specific glass for her. The 20/1.8 gives the perfect walk around ~35 (eFOV) and the 70-200/2.8e gives the perfect reach glass. My images are looking good. For landscapes and general, I see no difference from my D750 results.

And yet, the big test for me is how does it do for children? Well, I'm going to gush forever about the mechanics being a liberating thing, and the sharpness is there in the eyes and fingers, but overall I still think I prefer the images from D750. Not that the D500 is bad, but (so far) I can see a difference that is beyond my ability to describe intelligently.

I will keep practicing with the D500 (experimenting with different lenses to see how it responds) as it's the camera to grab just because it fits my rapid, run and gun style so well. It's very easy to advise someone to look elsewhere if you don't get a thrill from snappy AF, 10fps, and an endless buffer. Oh, I envy the slower shooting styles.
If Nikon does something special in 2017 then I got 4 grand waiting for them. That would give me the best of both worlds (Dx and Fx).
