I am just starting to play with the "two developings from a single RAW" file technique myself. With very good results.
IME, combining two tripod shots is not that difficult to do in most cases. Even if you hand-held you could do it pretty easily. But then I do a lot of panos and am used to dealing with this sort of stuff. --c
It doesn't sound like you're using mirror lockup then to try to reduce camera shake.
Not always no. I try to use MLU when I am working off a tripod, but that's not always possible. When firing off bracketed exposures at speed, definitely not. Of course, I only do that when I can get shutter speeds of 1/200 or faster. On a 17-40, I find it very hard to see a noticeable difference between mirror lock up on or off.
