Concerning size of grid on 8.5 in. reflector for PCB light. For spot of light behind subjects head in a portrait shot, should I get a 15 degree grid or 30 degree?
It depends on what size and definition of "spot" you want. The 30 degree would be more practical for more applications in that you can just move it closer if you want smaller and more defined.
I would go with getting a set, and which one you use will not only depend on size, but also on what shape you want. Unless it is actually positioned behind the subject, the closer it is the more elliptical or oval the spot will be, because of the angle it will have to be positioned in to keep it out of the frame.

I have used a shoot with a 10º grid for this.
