I imagine you would have to remove the sensor first or put some sort of sealing film on it because you probably don't want anything to coat the actual sensor.
Check out the videos at the bottom where they dunk the iPhone.
Now, I'm NOT saying you'd want to dunk your whole RX100 or NEX-7 completely submerged in water but splash and rain sealing them sounds like a doable idea.

I don't think you'll want the inside of the camera coated with that, at least Canon's DSLRs have flocking in the mirror box that is sticky to dust particles and anti-reflective, which may be negatively impacted by the coating. Also, I don't think it's going to work for things like control wheels and dials that move physically -- they'll still rely on rubber gaskets to seal them, I imagine.

I'm curious if they used distilled water for the test or regular tap water. Distilled water doesn't cause shorts or anything, so if they used distilled, there's little real risk to the phone, I'd think, even without the coating.
