Canon can and have. The M5-6 have IBIS, it's only that that it is video only...

As a user of alternative lenses, both on DSLR and MILC, the value of IBIS to me is greater in a MILC because there are many lenses with short flange distance and without IBIS. Meaning I have more lenses in total that benefit from IBIS on a MILC.
Generally it is more a thing of meeting competition for the future. The days are gone when a user has to select betrween lens and body stabilisation when choosing a system. With Sony we can have both, even with Canon IS lenses.

The future from them seems to be high resoltuion cameras and big and exceptional lenses. That's where I live anyway. I'll wait them out on the 120 MP camera.

I am not. But I do foresee myself trawling the used market for the next few years* to keep myself in usuable gears while keeping an eye on the MILC horizon.

The driving idea behind mirrorless was to allow smaller cameras to be made.Greater AF accuracy came later as the technology improved. Still, in low light with subjects coming fast towards the camera this may not be true.
The hybrid viewfinder has the merit that the user can choose to see either the optical or electronic view. The optical is better at showing the subject in real time with no pixel artifacts, flashing, blocking of shadows etc annoyances of the electronic, and it would have the advantage of a dedicated AF sensor module (which has both advantages and disadvantages). The EVF mode would then facilitate zoomed-in views, peaking, histogram etc. or showing an exposure simulation, and could be used for video. In my opinion the merits of the hybrid approach are significant.
However, the quality of the optical view would suffer due to the hybrid implementation. I believe this is why Nikon didn’t implement it: too much fidelity loss on the optical side.
An interchangeable viewfinder would be a better solution IMO. Dedicated optical and EVF modules could be swapped.

OVF and EVF are too much different to make them simple swappable modules, too much other parts of the system would have to change as well in order to have both perform optimally. How about in a rangefinder-based OVF with EVF option? Is this what you are referring to in your last sentence?

yes, I think that is technically more viable although it would still have the problem of being relatively expensive ("niche") while systems with only EVF could get very cheap in future (e.g. 5 years from now).
