How does the fade resistance compare between prints mounted on Gator Board vs behind glass. Any other pros or cons between the two?

I am not sure what you're comparing? The first is a substrate, and offers no protection in terms of fading.

Seems like what you're asking is does glass preserve the print better? TO which I think the answer is not a whole lot, unless you are using UV glass. However you can get UV glass for not much more than "plain" glass, so I don't think it's usually a big issue to get UV glass if you want/need it. It's the antireflective museum glass that really costs.

But exposure also comes in to play too. I have a number of prints in my apartment where I removed the (cheap) glass that came with the frames. These prints do not seem to have faded appreciably after about 3-4 years, however, they also do not get a lot of direct sun. If they got more direct sun they would probably have faded visibly during that time.

Do they make UV-protective spray coatings for photos that are not framed behind glass?

You have to give more info for a good answer. If the print mounted to Gator Board is coated with a UV lacquer is should be just as good as glass or better. If un-coated and exposed to acids in the air and direct sunlight yes it will fade much faster then behind good UV glass. But not over night....it will still take a few years.
