Will these older, non-AF lenses work on my D300 as they did on my long gone F3?....,i.e. will I be able to view wide open until I release the shutter and is the lens meter-coupled to the D300?

Yes, the pro and prosumer bodies are compatible with AI/AIS lenses (they will meter properly, A and M modes will function as expected).
The compatible bodies include: D2 series, D3 series, D200, D300(s), D7000 and the most recent ones.

As pointed out by Guy the AI/AIS will work perfectly. However, take care with non ai/ais lenses (made before 1977) which will need a modification to work properly and do not damage your D300.

Avi B gave you the link, IMHO, of the best thread in this forum where you can find a huge amount of images, info, fun and friendship regarding to the use of Nikkor MF lenses on Nikon digital bodies.

Specifically for D300 some samples with Nikkor AIS (20mm f/2.8, 50mm f/1.8, 105mm f/2.5, 400mm f/5.6 ED non-IF, 600mm f/5.6 EDIF, and 800mm f/5.6 EDIF naked and with the TC20EIII):

Yep, the D300 works great with AIS lenses. In fact I bought a D300 solely to use on my 800/5.6 lens.
