Here's a set of D700 vs D3s shots I just took. Shot raw, equal exposures, same lens, processed in LR3 with all defaults but with WB set and the camera profile set to Camera Neutral. WB is 4150 + 15, so better than your average indoor lighting. I'll shoot some incandescent shots tonight.

Thanx for this insight. I'm also aware of the better ergonomics, quicker AF, dual CF slots, etc., but hadn't considered the better color detail and dynamic range.
Clearly a difference there... Pet fur is an excellent choice for a real-world comparison. Thanks!

I found the ISO comparison below to be informative, and answered some of the questions I had between the D700 and D3s ISO performance when I was seriously looking to buy a D3s. Which I did and just love it.
