You can only affix a value to each lens. This value will not change when you
1) change the aperture on the lens manually
2) rotate the aperture wheel in Av mode.

To me, this serves to identify each lens in peripheral illumination adjustments. There are no other uses I can think of for fixing an aperture value to the lens that I can think of at this point.
