What I can say is that I shoot with some idea how I want to expose a scene and what I want to do in post. I don’t just shoot and then fix mistakes in post.
I gave my oldest daughter a Sony A6700 and a few lenses for her 20th birthday. She refused every offer of help regarding anything related to using this camera. She returned from Japan with only JPEG and for the most part they look good/OK. I’m guessing that camera firmware will best anyone that is unwilling to invest the time and effort to understand everything involved in exposing and editing an image. So, the two workflows are for different photographers, or JPEG can be for someone on a tight schedule, or need to transfer real time images remotely.
I use an 8TB and 4TB SSD for storage and backup to my NAS and to an online backup services. My NAS can sustain two drive failures without data loss and it backs up to a backup server for my backup server and that server can sustain a one drive loss. I have my video on the NAS and it communicates with my MacBook Pro via Thunderbolt 4.. relatively fast.
