Mr Sing who is originally from the Rajasthan Region of India is a Dairy truck driver here in Parma. He has been driving milk from the dairy to one of the famous Parmigiano Reggiano cheese makers for over 30 years. A very interesting, fun, and friendly guy. As I posted earlier, for my project I am going to focus on the Parma immigrant community a bit more this year. They are having a big impact on the current life in Parma. Mostly in a good way. I went to the other side of the river today where many of the immigrants tend to live, and had a fantastic Punjabi lunch. The Italian food here is the best they say, but I am from a Pacific Rim city, and have traveled extensively most of my life. I am used to, and often crave variety in my food. Not always easy to find here.
