Welcome to Nikon's settings banks hell. Look up custom shooting and settings banks. Some of your desired settings go into custom shooting (ISO and RAW), and others go into custom settings banks. IBIS goes into none, AFAIK. IBIS/VR works together, and you can either have both or none. I would suggest leave it in sport mode and don't touch it unless you really need tripod level stability. Also lookup Recall Shooting Function.
