I like the APS-C options because the setup is that much smaller and cheaper. I have the A6700 and A7CR. For most day-to-day shooting, I just bring the A6700.
Instead of the 10-18mm + 18-50mm sigma combo, I would suggest
1) 10-18mm + 56mm 1.4 if you favor portraits, or
2) 18-50mm and sony 11mm f1.8 OR 15mm f1.4 if you want a fast wide angle for night photos.
I mentioned these lenses specifically because they are the smallest and lightest in class even when compared to their APS-C equivalents. Just compare the 15mm 1.4 G with any 16mm 1.4 (Sigma, Fuji etc.), or the 18-50mm Sigma with the 16-55mm G or the 17-70mm Tamron. The 11mm 1.8 is smaller and cheaper than any of the wide angles that Fuji offers.
For A7CR, the 20-70mm f4 is a solid option, or you could consider the 24-50mm f2.8. Both are relatively compact, so you are just trading focal length range for aperture. For short tele, the options you have listed are superb as well. I would just throw in the FE 85mm 1.8 as an alternative.
Between FF and APS-C, I would go with the smaller sensor if small and compact is important. These days, crop sensors can already produce really amazing photos with well-controlled noise. The marginal IQ benefits when switching to FF is not as high as in the past for most people. If I'm shooting FF, it is not for the IQ; it is for DOF. I'm going to want at least an f1.8 for focal lengths between 24 and 85mm, and there are plenty of 1.8 variants that are relatively compact and affordable too.
