I would say that if your bird photography doesn't include much BIF then the Sony combo sounds like it would satisfy you the most just because I think you will really like still having f/4. The 600GM on the A7RIV worked really well. Much better than my 200-600 did. I just don't enjoy BIF with the blackout of the MS or the slideshow of the ES (at 10FPS).
If you want the better performing camera then the Z9 would be better. You should know if you need f/4 or not seeing as you shoot one now. That would be your limiting factor with your proposed Nikon setup. Also haven't you always been a bit negative towards PF lens rendering?
I was amongst the adopters of the 500PF, and still remember there were f4 shooters that rejected the 500PF, some passionately. I was not in that camp.
My issue with the 500PF was that i.m.o. it does not do well with a 1.4TC, and that it does not separate from the background gracefully. Once I got the Sigma 500/4 I realized that this is not only down to the f5.6 max. aperture, but also (in part) down to the optical formula of the 500PF. Even at f5.6 the Sigma 500/4 still has much more graceful bokeh and separates better from the surroundings. That is why I already made plans to switch to Sony for the 600GM. But that was before the 800PF was announced as being developed.
I expect the 800mm f6.3 PF to do distinctly better at subject isolation. And being an 800mm lens, I won't need a TC, so I won't care about how it takes a TC. F6.3 still ensures good clarity. The benefits of the Nikon set-up, are that with the Z9 and the 500PF, I have a small and still relatively light 500mm combo, and with the Z9+800PF I will have a still portable combo with native AF and no need for a TC (I don't like TC's anymore honestly).
Since I cannot afford both, and switching is really expensive, I am thinking this through properly this time. If I go for the Sony 600GM, I will sell the D500, 500PF and Sigma 500/4.
