Ben - the members only designation is because of the archaic (or locally translated - backwards ass) North Carolina liquor laws. We do not have “bars” in the sense that most places have. To have liquor sales in a public establishment, it must be tied to a specific percentage of food service sales (restaurants, hotels, etc). So for a town to have a local watering hole, it must be a “private club”. So basically places like the Pig take what would otherwise be considered a cover charge and call it a membership fee.
All liquor/spirit sales in North Carolina are controlled by a state run Alcoholic Beverage Control Commission (ABC board). There are no public liquor stores or package stores for the purchase of spirits. You can purchase beer and wine at the grocery store for example, but spirits are sold only at an ABC store. In smaller towns like where I live, you only have the one store or none at all.
