Back light your subject. Keep the whole face shadowed and then lift in post. Shoot raw like mentioned and use that ability to recover highlights.

You're in the nikon forum so you don't have to worry about lack of dynamic range....

P.S. Also worth mentioning, avoid shooting in midday sun. Lower the sun, the softer the light.
