I'm not really biased one way or the other, but I've tried adapting the same lens on both my A7 III + Commlite ENF-E1 Pro adapter and the Z6 + FTZ adapter. The A7 III files look much sharper, while the Z6 files have easier to manage skin tones and more precise metering. Also Nikon's auto-ISO has a tendency to maintain a high shutter speed while keeping ISO as low as possible. Sony's auto-ISO will opt to go with higher ISO, despite having adequate light levels.
I often shoot my A7III and D750 simultaneously and cull the raws together. I tend to spend more time tweaking the Sony files to fix odd color cast issues in varying light conditions, while Nikon files tend to keep the same color profile regardless of lighting conditions. This is using 1st party lenses on each body as well.
