Salt Farm. A salt farmer piling salt to dry in Chanthaburi province, Thailand.

Considered an environmental blight they do help satisfy the population\'s thirst for salt. Mangroves are cut to make way for salt ponds which fill with the incoming tide. The ponds are then dammed trapping the salt water. Evaporation can be complete in as little as 10 days. Salt plays a vital role in Thai cuisine - from pickled fruits and vegetables, to the production of fermented fish and shrimp paste.
