I also use a 7D
Personally I can never get good results with the 7D RAW processing in ACR and CS5
it always has an annoying pattern in the sky as your image does
My solution is to use Apple Aperture 3 (v3.2.2 is current) or Canon DPP (v3.11.1 is current)
Both Apple Aperture and DPP 3.11.1 give clean sky images
I get the best 7D RAW output from Aperture 3
