I haven't tried the ZM on a Sony a7 series camera (one of the few ZMs), but the a7S should have the least color shift problem of the bunch. If it does, the 'Adobe flat field plugin' for Lightroom will resolve the problem, and I believe you can run it in batches. You just need to shoot a few images with a white diffuser over the lens and at a couple aperture settings you're likely to use most, such as wide open and maybe f/8, which the plugin will use to determine the extend of color shift correction (and maybe also vignetting).
I suspect the ZM and ZF 28s could be somewhat different in character, too. The ZM has a good amount of Zeiss pop and is centrally very sharp, but on a Leica M it takes a few stops to really bring up the edges if you're looking for across frame sharpness. Then there's also the question of how much the outer zone will be affected by image degradation due to the camera's sensor stack thickness (which can also affect field curvature). I haven't tried the ZE/ZF version, but from my recollection of Philippe's (philber) comments about it years ago, it seemed to be a bit of an outlier in the lineup (IIRC).
