If you want to get something that is actually made for rain use Kata makes a good generic rain cover that should cover the 70-200 and runs about 50 bucks. I use it and find it to work pretty well.
Shot outside during a whole football game at night in the rain. D300s with a 70-200 VR on it. I do remember reading somewhere your camera is most susceptible to water at the lens mount and all of the professional Nikon lenses should have a rubber gasket to help with water not entering. I wouldn't take my Tamron 17-50 out in the pouring rain but my 70-200 was flawless. Just left it out of the bag at night when I got home and it worked fine in the morning. I patted it down with a towel when I got back to my car though.
Andre, your technique sounds like a good option for rain when you're shooting from a stable/stationary surface. I'll definitely keep it in mind.
Shooting from boats may be a different story. Bass boats can move pretty quickly and often it's all I can do to just hang on to my doggone camera if we're running in rough water. I may look into one of those Kata bags. I think I actually saw one once at a local camera shop that somebody had special ordered for shooting dog events outside.

AH! Yes, you have a totally different situation. I'm afraid I missed that. I do kids sports from the sidelines.
In addition to Kata, I think Think Tanks makes some covers. Also check out Aquatech. That pro stuff is so pricey though.
If I'm walking or otherwise don't have the camera up to my eye on a rainy day, it can stay zipped around the camera on strap. There's a lift up flap for the viewfinder, and a window for the top LCD but no way to view the LCD on the back.
