I'm using the same cards, and if I fill 2 of those, I have a 4-gig of the same speed. Then I drop down to the slower cards. I can't imagine where I'd have the need to use any of my older Extreme II cards but I still have a couple.

My rough test of speed and burst capability with RAW images:

8-gig Extreme IV UDMA (45 mb/s) - 25-26 shot burst, 2 shot pairs every 2 seconds afterward.
4-gig Extreme IV UDMA (45 mb/s) - same
4-gig Extreme III - 23 shot burst, 1 shot every 2 seconds afterward.
4-gig Extreme II - 20 shot burst, 1 shot every 4 seconds afterward.

You can see a longer burst with the faster card as well as quicker buffer clearing times. The 5D2 has similar results, though with a somewhat smaller buffer (in terms of the number of shots it will hold).

One of my partners has a 7D. We covered a Youth Football Championship (5 games) last weekend. I wanted to try the 7D so I shot all five games with it (1d3 as the other body). I shot large Jpegs at all drive speeds. I ran Ultra II's;III's & IV's. We ran cards every quarter and I could not tell what card was in the camera. I know this wasn't too scientific but it was real world.
