I shoot a 4x5, 8x10, and soon a 6x17. With my 8x10, I can overextend the bellows to shoot a closeup image. It is very easy to crop out just a panoramic aspect ratio, yet still maintain a huge surface area that can be scanned for a mural sized print. Is it practical? It depends on the output you have in mind. I've actually been doing a fair amount of that lately. If I did that with the 8x10, you'd darn near see the cells. :-)
I use to do some pano work with stitching, but found that it didn't fit my style because I could not set a precise composition through the viewfinder. I never quite knew exactly what I would get. I wanted the resolution, but not the stitching process. Stitching was fine for mid-day shots, but darn near impossible for shots that require a long exposure. For my own needs, I found that film gave me the image quality I wanted.
