Young, if you use a 24-105 on your 5D, that should get you more than 80% of the shots you want, from lansdscape to portrait. Whether you want to complement this with more specialised lenses (wider, longer, faster, macro, etc...) is up to you.
24-105, 85 F1.8, 35L, 5D, the zoom will do your day work but the other two will work in any light! F4.0 needs light unless everything is motionless! I'd take the nikon body and lens for the reason mentioned, what's available if something fails!
Tempting, yes, good lens, yes. Is it what you are going to get good value for weight/cost/risk in Vietnam? No. Does it mean that I am right and you are wrong? No, whatever floats your boat...
This is my standard 'tourist' pack. Also tempted to put a 450D with 15-85 in a plastic bag in the suitcase as backup (1DsIII probably too heavy).
Comments please on if I will need 24LII (maybe) 35L (probably not) 85L (possibly) and anything longer (or wider). Anytime I pack longer, I don't seem to use it except if I am doing Rugby, and this trip, I am not.
Only problem with the 70-200 in that enviroment is that it sticks out like a sore thumb.
I would bring:
24-105 - good for almost anything and the IS is very useful.
85 1.8 or 100 f/2 - great portrait lenses - fast, small, inconsipicuous.
70-200 f/4 - for a little extra reach when needed.

Wish I had the 24-105IS...

17-55 Nikkor
85L
70-200IS
and maybe the 100-400L for flower, birds and whatever I might meet there...
