Someone compare a 2 way or better yet 3 way APS C to APS C - 40D to 50D to 7D - Same Subject, Light, Lens, Exp, and various ISO ...
In theory, the smaller pixel will lose on IQ , Sharpness, DR, Noise.
We know the price difference ...
I haved read through this thread since I need to choose which cameras I will take to Africa with me (am leaving Saturday) - I am still not sure after all of this

You won't get that answer from this crowd......
If it were me (and I've never been on safari), I would go option 1 for several reasons:
1. same batteries, only need 1 charger and you can swap if one camera's runs dry
2. you will probably want some wider shots, so the 5d2 + 16-35 would be the best choice for that
3. the 400 +7d for long distance, with the 100-400 on the 5d2 would cover distant subjects as well as anything closein that pops up
4. post this in the N&W forum, as those guys are generally pretty civil and helpful, without things degrading into childish behavior

Well, having both the 100-400 and the 400 DO on a safari is somewhat redundant, at least it would have been on my Sept 2006 safari I had the 1Ds2 with the 400 DO glued together. Then I had a 28-300 on a 1D2N. Then I had a 24-105 on a 5D. Rarely did lens swapping because of dust. That setup worked great for 2 weeks. Borrowed 16-35 for a few shots, didn't really miss it. Had the 35L with me, didn't use it. Had 1.4x TC, rarely used it.
If you're leaving Saturday and you don't know what to pack, or even buy, I foresee trouble
I would also go option 1. I think the 5DII goes with either the 7D or 1D3. 5DII is awesome for your landscapes and people shooting, and either the 7D or 1D3 for wildlife (but I don't see the point in bringing them as a pair). And TimBop had a great point about same batteries. Plus the 1D3 is bulky/heavy.
I was on safari in Tanzania in June '08 (see my blog at http://www.btleventhal.com ) and I traveled with a 1DII and 5D while my wife used a pair of 30D's... my 1DII was glued to a 300 f2.8 + 1.4x and the 5D was used with a 70-200 and 17-40. This was a great combo. I'm heading to Kenya in June '10 and will bring my 1DmkIII (upgrade) and 5D "classic" and shoot the trip with the same lens combo... I never wanted for more in '08 and am sure that I'll be well equipped for 2010.
