I haven't used the meter too much, but when I have, I've found the D700 to be better.
More specifically, for me the D700 has been more consistent in all types of lighting, whereas the 5D and especially the 5d mark II are spotty in scenes with bright skies, and even overcast days. The subject just always seems underexposed whereas the D300, D700, and D3 are just more reliable in that regard.

I agree. I was frustrated with the D700 for a long while until I realized I was trying to shoot with it like it was a 5D. You just have to get used to the beast. It's a very precise (albeit stupidly heavy camera! It will do you very well.
