Shutter speeds from 1/4 to 1/2 second and longer focal lengths, around 200 to 300mm... And moving the camera typically in the direction of the length of the subject matter (moving the camera up and down for tree trunks etc...)

In the table tennis shot, looks like you've got 2 separate flashes going so maybe slightly long exposure in pitch darkness, setup on one side and flash that side, run over to the other side and flash the other side?

Exactly! . 30s exposure in pitch darkness and a friend who flashes two times with another camera without a film in it, each side only once and the middle of the table gets the most light. You can see it in the way the shadows fall in the picture.
